The hemp seed is not actually a seed but a fruit.

Hemp seed is a versatile, high protein food source. It is made up from 25% protein, 30% carbohydrates and 15% insoluble fiber.

Hemp seed is high in calcium, magnesium, phosphorus, potassium, carotene, sulfur, iron and zinc, as well as Vitamins A, E, C, B1, B2, B3, and B6. It is 25% to 35% oil, and is rich in polyunsaturated essential fatty acids, particularly the w3 EFA linoleic acid (55%) and the w6 EFA linolenic acid (25%), as well as linoleic acid derivatives rarely found in other seeds.

Seed Cake is what remains when the hemp seed is pressed for oil. It is high in protein and can be used similarly to soy beans in making milk, cheese, icecream, and a tofu type curd. Seed cake can also be ground into a “flour” and used for baking.
